Jalapeno Cornbread

Not sure how this one hasn't made it on here before, but it's been one of our favorites for more than 20 years. Great with chili, soups, bbq, and just about any comfort food.

2 cups corn meal
1 cup whole wheat pastry flour
1 cup unbleached white flour
4 tsp baking powder
optional - 1/2 to 3/4 cup poppy seeds
2 pinches sea salt

mix the dry ingredients.

Blenderize the liquid ingredients, which are:
4 oz tofu
1/2 cup oil
1/4 cup maple syrup
1 1/2 cups water
1/4 - 1/2 cup sliced jalapenos
optional - juice of an orange plus 1 tsp grated peel.

mix all ingredients and pour into a greased, heated cast-iron skillet.

bake at 375 uncovered for 20 minutes.
